Avocado cream soup with Cereals & Soy drink
Ingredients

2 onions, 2 tablespoons of mild olive oil, 4 avocadoes, 1l of vegetable stock, 100 g of Kamut® spaghetti, 1/4 l of Cereals & Soy drink, 2 carrots, parsley, chives.

Preparation

Finely chop the onion and fry in olive oil until slightly golden. Peel the avocadoes and remove the stones. Cut them into cubes and add to the onion. Cover with vegetable stock and cook until ready (approx. 10 minutes). In the meantime, boil the spaghetti until al dente, drain and cut into small pieces. Blend the soup, then add the Cereals & Soy drink. Grate the carrots and boil them for a few minutes in the soup. Add the pasta. Garnish with parsley and freshly chopped chives.
