1 large onion, 1 cup Genmai Su, 1 tbsp old mustard, 100g Si'doux rice syrup, 1 tsp finely chopped ginger, sea salt.
Cut the onion into small cubes and put in a bowl. Add the Si'doux, the Genmai Su, the mustard and a pinch of salt. Add to your choice, apples, rhubarb, mango or cleaned and chopped shallots, and cook until done. Other vegetables or fruits such as tomatoes or chicory can be used in chutneys.
